
Serve these tasty, little, personal-sized meatloaves for a meat selection the kids will love. An outstanding Valentine meal when combined with our homemade, microwaved potato chips and a veggie.
Kids can help: Add ingredients and pat into muffin tins.
Saute
- 3 garlic cloves
- ¼ cup vidala onion
- 1/8 cup finely diced celery
- 1/8 cup finely diced carrots
- 1/8 cup finely diced mushrooms
- 1 Tbsp olive oil
Add Ingredients
- 1 lb ground turkey
- ½ cup panko or bread crumbs
- ½ cup dry oatmeal
- 1 egg
- ½ cup ketchup
- ½ cup grape jelly
- 2 Tbsp grated parmesan cheese
- 1/8 tsp chili powder
- Salt & pepper
Saute veggie mixture for about 5 minutes on medium heat. Mix together with all other ingredients in a large bowl. Mix well with hands. Pat into muffin tins, filling only 1/3 full. Top with ketchup hearts and mozzarella slice hearts, if desired. Bake at 350 for 15 – 20 minutes, then check for doneness. Edges should be firm and center fully cooked.
For a large meatloaf, pat into a baking dish, in a loaf shape, and bake for approximately one hour.
