Red Hot Cup-a-Cake Valentine Recipe

Serve these sweet treats for dessert or make them to give to your friends and family.  Red velvet cupcakes, baked in canning jars, topped with vanilla icing and red hot cinnamon sprinkles make a unique Valentine gift.

Kids can help:  Mix ingredients and add the sprinkles.

  • 3 Tbsp butter
  • ¾ cup sugar
  • ¼ cup applesauce
  • 1 egg
  • 1 tsp vanilla
  • ¾ cup buttermilk
  • 1 tsp lemon juice
  • 1/8 tsp lemon zest
  • ½ tsp red food coloring
  • 2 ¼ cup flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 2 Tbsp cocoa
  • Icing
  • Cinnamon Red Hot candies

  • ½ pint glass canning jars
  • Paper designs for lid inserts
  • Ribbon

Cream butter and sugar.  Add applesauce and egg and mix well.  Blend in vanilla, buttermilk, lemon juice, lemon zest and food coloring.  Mix well.

Combine dry ingredients and add slowly to mixture, stirring well.  Spoon batter into each glass jar, filling only ¼ full.  Set jars on cookie sheet.  Bake in 350 degree oven for approximately 15 – 20 minutes.  Test with a toothpick for doneness.

Let jars and cakes cool completely.    Frost cakes.  To get the roped icing effect, put icing in a pastry bag and, using a large tipped opening, make a circular, graduated rope, ending with a peak at the top.  Decorate jars with printed design shown, Red Scrolls, or cut a circular piece of colored paper to fit the lid insert.  Finish with a red ribbon or tape a red strip of paper around the top rim of the jar.
