Delicious White Bean Dip Recipe Your Family Will Love

A good friend of ours, Thomas Cathey, is a whiz in the kitchen.  We love finding out about his yummy food creations.  Here is his take on a white bean dip that is delicious served with lime-flavored corn chips.

Ingredients:

  • Medium onion
  • Can of White beans
  • 2 garlic cloves
  • Lime
  • White pepper
  • 2 Tbsp Olive oil
  • Cumin powder
  • Lime-flavored corn chips

Saute one medium onion until tender.  Put into a food processor.  Drain juice from one can of white beans and add to onion.  Add one or two garlic cloves and a dash of white pepper.  Stir in the juice of one half lime.  Add two table spoons olive oil.

BLEND TIL SMOOTH.  Add a bit of bean juice if dip is too thick.  Spice with cumin powder if desired.  Serve with lime flavored Tostito corn chips.  Yum!

Smores on the Grill- Chocolate, Marshmallow, and Cake Dessert


S'mores CakesHere is a spin on traditional S’mores around the campfire- s’mores on the grill.  Let’s say you are planning a cookout or family- friendly dinner and want a fun dessert but without the fire or time it takes to roast marshmallows.

Try making these S’mores Mini Cakes.  They are very simple, quick and do not leave you cleaning up marshmallow sticks.

You will need:

  • A bag of mini-marshmallows
  • A box of Hershey’s chocolate bars (small bars or break up larger bars)
  • Package of individual sponge cakes

Directions:

Wipe the top rack of your grill with non-stick cooking stray or a little Olive Oil.

Turn on the grill to a medium heat.  Once the grill is pre-heated, place the sponge cakes top-side down onto the top rack for approximately 2 minutes (with the grill open).  Remove the sponge cakes from the grill, add chocolate into the center of each sponge cake and place back on the  top rack of the grill.  As the chocolate starts to melt (it will get shiny), place mini marshmallows into the center of each sponge cake, filling the space to the top or slightly above.  Close the grill top to roast the tops of the marshmallows.

Once the tops of the marshmallows are golden, remove the Smores Cakes from the grill and serve immediately.

Cherry Cobbler Recipe That the Whole Family Will Love

Nothing sounds more like summer than cobbler, whether it is a cherry cobbler or peach cobbler.  We just recently made a yummy cherry cobbler from the sour cherries that grow in our own backyard.  Served with vanilla ice cream, it was like a taste of heaven.

You can use either fresh sour cherries or pie filling to make a cobbler.  If using fresh cherries, pit about 3-4 cups of cherries and then add about a quarter cup of  sugar and about a teaspoon of flour or cornstarch for thickening.

Recipe for Cherry Cobbler

  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 1 cup flour 1 tsp salt
  • 1 Tbsp baking powder
  • 3/4 cup milk
  • 2 cans cherry pie filling or 4 cups fresh sour cherries

Preheat oven to 350 degrees.  Then melt butter in a 13 x 9 x 2 inch pan.  Mix brown sugar, flour, salt and baking powder together and mix well.  Add milk, this will be a thin mixture.  Pour over the melted butter and then top with the cherries or pie filling.  Bake for approximately 50 – 60 minutes, until brown.  Serve with vanilla ice cream.

 

Shopping and Cooking from the Farmers’ Market, with the Kids


“My kids are so picky.”  “My son won’t eat anything green.”  “All she’ll eat is celery”.  The complaints from parents are endless and frustrating.  We all hope to have that kid who eats everything, without complaining, but does he really exist?  Probably not, but there are a few things we can do to expand kids’ horizons a bit.  For starters, shop and cook with your kids.

With farmers’ markets popping up everywhere from Spokane to Tallahassee it’s easy to find out what’s in season in your town.  Cooking with the seasons means the freshest produce at reasonable prices.  Take some time to find your local farmers’ market and schedule a field trip with your kids.  Before you go, tell them that they get to pick out what you’ll make. If they’re old enough you can even give them the money to buy it.  You’ll be amazed at what that little bit of empowerment will do!

Make FUNtastic Party Sandwiches for Big & Little Kids

Make any casual meal into a party with these fun and unique sandwiches. Both kids and adults will have fun making and eating these creations and what better way to get kids to eat more veggies than to make them a fun sandwich like these.  You can make a fun party sandwich to fit any theme.  Here we show you how to make some really creative sandwiches, starting with this cute Pirate.

Our preference is to use thin slices of bread and you can choose white or whole wheat.  Even though we always eat whole wheat bread on a normal basis, for these we like the contrast of the white bread and the colorful vegetables.  Note that you can get creative yourself and make any fun food substitution that works.  Change veggies, add grapes or walnuts ... lots of options for food fun!

For the Pirate:

  • 2 slices white bread
  • Red pepper
  • Olive slices
  • Cucumber
  • Radish slice
  • Chives
  • Orange nose (carrot, orange pepper or cheese)
  • Sandwich filling of choice (turkey, cheese, ham etc.)

Cut slices of bread into circles with a sharp knife.  Fill sandwich with a combination of your favorite ingredients, such as ham and cheese, turkey and cheese, turkey and avocado slices.  If it is for a child's party, try to choose ingredients that kids will be most likely to eat.

Now, cut a large red pepper slice to make the bandana of the pirate.  Cut two little pieces to make the "ties".  Add eyes, nose, mouth and ears, as shown.  Use olive slices without pimentos for earrings.

Recipe for Making Popcorn or Kettlecorn without Chemicals or Additives

I enjoy popcorn.  I prefer air popped popcorn with a little butter and salt to microwave popcorn.  When I am in a hurry I will often make a bag of microwave popcorn but the artificial flavors and coloring can turn me off from that option.  I have begun popping my own microwave popcorn in a paper bag.

It is quick, easy, and a healthy popcorn option.

To make popcorn or Kettle corn in the microwave you will need:

  • 1/4 to 1/3 cup pop corn kernels
  • non-stick cooking spray or a dash of olive oil
  • sugar
  • salt
  • 1 paper lunch bag

Spray your popcorn kernels with cooking spray (usually 1 pump will do).  Stir the kernels to coat evenly.  Pour your kernels into the paper bag.  Add teaspoon of sugar (you can add more or less depending on how sweet you want the popcorn).  Add salt to taste (usually 1/2 teaspoon).  Close the paperbag and fold the top over two times.  Shake the bag several times to coat the kernels with the sugar and salt.  Lay the Bag on its side in the microwave and cook it for 1 minute 30 seconds or until the popcorn popping slows down.

Take the bag out of the microwave, shake it, open and enjoy tasty popcorn that costs only pennies per serving and does not have any of the artificial flavorings or coloring.

Great Smoothie Recipes the Kids Will Love

Once the warm weather hits, all I crave is icy cold, delicious treats. What better way to curb these cravings than to whip out my beloved Vitamix and fill it to the brim with all of my favorite fresh ingredients! And no I’m not talking about chocolate milkshakes here, but decadently healthy, thick, and creamy smoothies!

So with Spring Fever officially in the air, I asked my creative culinary team of virtual interns to share some of their favorites smoothie recipes! With diverse ingredients ranging from spinach to flax to avocado to oats, I can’t wait to add these new recipes to my smoothie repertoire!

Rachel’s Pomegranate Berry Smoothie

Ingredients

½ cup pomegranate juice

½ cup low fat vanilla yogurt

1 cup frozen mixed berries

Directions: Combine all ingredients in blender. Blend to desired consistency.

Kristen’s Green Pina Colada Smoothie

Ingredients

1 scoop Pina Colada Whey Protein Powder

2 cups spinach

1 cup skim milk

6 raw almonds

1 small banana (frozen)

Optional: Pineapple or other fruit slices on top

~ 10 Ice Cubes

Directions: Combine all ingredients in blender. Blend to desired consistency. Pour into pina colada glass and add toppings!

Kaylee’s Raspberry- Avocado Smoothie

Ingredients

1 avocado
1 1/2 cups real fruit juice (I like orange, grape, raspberry)
1/2 cup raspberries (fresh or frozen)

Directions: Combine all ingredients in blender. Blend to desired consistency.

Kaylee says: “This is really creamy because of the avocado and has healthy monounsaturated fat!”

Easy Easter Cookies to Make with the Kids

Here’s an easy Easter activity to do with your kids.  Make sparkly Easter cookies using store bought cookie dough.  It’s as easy as 1-2-3.

Just roll out the dough and use fun Easter shapes to cut out  the cookies.  If you don’t have any bunny or egg cookie cutters, then just cut out some egg shapes free-hand or use the top of a glass to cut out round shapes.  Stretch the rounds into ovals and wallah! Easter eggs!

Sprinkle cookies with fun pastel sprinkles and bake.  That’s it.  And what pretty Easter cookies you and you grandkids made together.  Such memories!

Cold Sesame Noodles- Healthy Kid Approved Meal by The Sneaky Chef

Nutrition Highlights: Antioxidants, Vegetarian, Healthy Fats

Makes: 6 Servings

Here’s another of my family’s Sunday night Chinese take-out favorites, typically reserved for those times when we’re indulging in higher-fat foods before starting a diet on Monday morning. I just had to find a way to enjoy the authentic taste of this dish a bit more often, without the guilt. This recipe does just the trick, with less than half the fat of the original!

- 1 tablespoon brown sugar

- 4 teaspoons toasted sesame oil

- 3 tablespoons low-sodium soy sauce

- 1/4 cup tahini (sesame paste), well-stirred

- 1 cup White Puree (see Make-Ahead Recipe #4)

- 1/4 cup rice wine vinegar or cider vinegar

- 2 to 3 garlic cloves, minced

- 1/4 to 1/2 teaspoon dried red pepper flakes, to taste

- 1 pound Asian noodles or thin spaghetti, ideally whole wheat, freshly cooked

- Optional extra boost: 3 green onions, thinly sliced; 2 tablespoons toasted sesame seeds; and/or sliced cucumber strips

> In a medium-size bowl, whisk together the brown sugar, sesame oil, soy sauce, tahini, White Puree, vinegar, and garlic. Add red pepper flakes to taste.

> Put the pasta in a large serving bowl. Spoon the sauce over the pasta, tossing to coat the pasta evenly. Garnish with sliced green onions, cucumber, and sesame seeds, if using. Refrigerate until cool, or feel free to serve it warm.

Fun Shamrock Sandwich Recipe to Make For St. Patrick's Day Treat

Let's have a ShamWich ... our own take on a sandwich for St. Patrick's Day or any other day of the year.  Our Irish friends will surely love this one and the kids will too!

The outer part of the sandwich is created from healthy wraps, that are spinach-based or veggie-based.  Just use a round cookie cutter to 3 inch circles.  Or you can just use a glass, setting the top rim on the wrap and, carefully, cutting around it to get your circles.

The insides of your ShamWich can be most any favorite sandwich ingredient, but here we used slices of cheese, cut into circles, and slices of tomato.  You can choose to serve this cold or heat in the microwave, on a paper towel, for 25 seconds.

Arrange three completed circle sandwiches on a plate and then garnish.

Use a piece of celery for you garnish of the Shamrock stem.  Wallah ... a fun ShamWich to serve on St. Patrick's Day.  And what an easy fun food to serve the kids ... they will even have fun helping to make these.
