At my house, any type of muffin is a hit.  So when we were thinking recipes to make for Fall, we decided to try making an old standby, stuffing, into a muffin.  Kristin is the whiz in the kitchen and the recipe is her creation.  Her addition of apple in these muffins makes them especially tasty.  The kids love them even though they aren’t usually stuffing eaters.

The mini stuffing muffins are great to serve any time of the year but they are a special treat we like to serve at Thanksgiving dinner. These kid-friendly muffins combine the tradition of stuffing with a fun apple twist.  Made into muffins, even the pickiest eater will try this yummy stuffing. Kids can help make these by stirring ingredients and then pressing the mix into the muffin tins.

Stuffing Muffins Recipe

Ingredients

  • 6 Cups bread cubes
  • 1 Cup diced apple
  • 1/3 Cup finely-diced onion
  • ½ Tsp. minced sage
  • ½ Tsp. fresh thyme
  • Dash of cinnamon
  • ¼ Cup apple juice
  • 1 ¼ Cup chicken broth
  • Maple syrup

Instructions

  1. Saute onion.
  2. Add apple, sage and cinnamon.
  3. Mix all ingredients and then spray muffin tin with olive oil. Press gently into muffin tins.
  4. Drizzle lightly with maple syrup.
  5. Bake at 350 for approximately 30 minutes.
